The Conseil National des Arts Culinaires (CNAC) was a French national institution established in 1989 by the Ministry of Culture to preserve and promote the culinary heritage of France. Its primary contribution to food literature was the multi-volume series *L'Inventaire du patrimoine culinaire de la France*, a systematic, region-by-region documentation of traditional food products and recipes that forms the backbone of the volumes held in this collection. The CNAC's work played a role in the broader cultural recognition of French gastronomy, which was ultimately inscribed on the UNESCO Representative List of Intangible Cultural Heritage of Humanity. The council was dissolved in 2004, leaving its publications as an enduring reference record of France's regional culinary traditions.
